A big step forward and some gravy

I don't always take stock in future plans and long term work related goals. I'm more of a do my job at 110% and take what comes my way. I'm good friends with the owner and I was shocked when he told me I'll be running the place in 10 years.
I wasn't sure how serious he was until we talked yesterday about a very near future hiring of someone to take some of my current time killing duties so I can focus on some other areas of the business. I'm pretty excited to see where it will lead, not bad for teaching myself everything I know and going about a lot of things blindly. I have no idea what the future will really bring, in any aspect of my life, but I'll keep giving it my all.

This makes me spend more time and energy at work, but I did manage to work on a new gravy. Someone in the house likes applesauce with pork chops so I had to come up with something... no applesauce in the house.

1/2 onion chopped
1 T worcestershire sauce
1 T White/Apple vinegar
1/4 C Water
1/3 C Maple Syrup (the real stuff, c'mon folks)
1 T chili powder
Salt (if you use it, I don't).. about 1/2 tsp

I heat this up to a boil, then use it as the basting/roasting sauce. Here is what it looks like on top of some pork chops before going into the oven.
Once you are done cooking whatever, thicken the sauce into a gravy like this:
Then make buttermilk biscuits that look like this:
and for a special treat open a box to see what's inside!

    1. I'll snap the recipe for my next blog post, I honestly can't remember this from scratch right now... well actually I just did....
      2 C. flour, 4tsp powder, 1/4 tsp soda, 1/2 tsp salt (if desired), 4 T cold butter chunks, 3 T shortening chunks, 1 C buttermilk. Fork it all together and knead it gently until its mixed in (I fold it a lot instead of real knead, it makes better flaky layers this way). Flatten by hand to 1/2 inch and use your old green bean can cookie cutter to cut them out. Repeat until out of dough. 400 degrees for 15 to 25 minutes (depending on your oven, just watch for the golden top.

      Some people like butter on top while baking but I don't. over kneading makes it not so light and fluffy. the butter and shortening chunks melt while cooking giving it a great flavor. I used salt in this last batch and didn't like the taste very much vs. the no salt, it's less natural tasting.

      I'll double check the note card to be sure I didn't miss anything, but I'm sure that's right. Christ, I ramble don't I?!!
